Ingredients: 10 g plain flour; 4 large free-range egg yolks; 75 g caster sugar; 2 teaspoons lemon juice; 10 g cornflour; 600 g small fresh strawberries; 150 ml double cream; a good pinch of fine sea salt; 225 g strong plain flour, plus extra for rolling; 1 tablespoon icing sugar, plus about 4 teaspoons for baking and extra for dusting; 250 ml whole milk; 185 g butter; ½ vanilla pod, cut in half lengthways; 125 ml cold water

Every now and then I do like a sweet fancy, so here is one. Please excuse the cat on the table (it was hard to resist framing this cute scene with a misty border).

600 g small fresh strawberries

Method

To make the biscuits, sift the flour, icing sugar and salt into a large bowl. Cut the butter into roughly 2cm pieces and drop into the flour. Toss around with a large metal spoon until the butter is lightly coated in the flour. Mix the water and lemon juice and pour into the flour and butter. Use a table knife to cut across the bowl several times, chopping the butter into the flour until the do
