This is so refreshing, totally delicious and perfumed. Delectably chilled, it makes me want to sing. La!
Don’t make this pudding unless the peaches or nectarines are of a very high quality.
Peel the peaches and use a small knife to cut them into neat slices around the stone, discarding the stone. Drop into a suitable serving dish. Push in the rinsed lavender heads.
Peel the lemon rind in 2 or 3 long strips and add to the fruit. Pour over enough wine to cover and gently turn the peaches a couple of times in the fragrant liquid.
Cover and chill for at least 4 hours b
