The hairy little gooseberry seems rather forgotten these days. So please revisit this delicious, plump and lonely fruit with this rewarding, snowy-topped and very easy pudding.

Ingredients

  • 500 g red or green gooseberries
  • 40 g unsalted butter, plus extra, for greasing

Method

Top and tail the gooseberries and place them in a saucepan with the butter and 50g of the sugar, to taste. Bubble gently for 6-8 minutes until the fruit is softened but not completely turned to mush. Stir occasionally to prevent it from catching on the bottom of the pan. Remove from the heat and leave to cool for 5 minutes.
