If citron pressé seems too basic for you, here’s a lemonade that requires a little more exertion. A fine refreshment post barn-raising to drink on the veranda with Ma, Pa and the boys.

Ingredients

  • 6 large unwaxed or well-scrubbed lemons
  • 6 large unwaxed or well-scrubbed limes
  • 1

Method

Wash the lemons and limes, then peel the rind in long strips. Put the rind with the water in a saucepan and simmer, lid on, for 15 minutes.

Squeeze the fruit and pour through a fine sieve into the pan. Simmer for 15 minutes with the lid firmly on. Add the sugar and simmer for a further 5 minutes, again with the lid on. Remove from the heat, cool for a few minutes, then stir in the tarta
