This naturally fermented fruit compote is unusual in its preparation and appearance.

It may look unappealing as it ages, but when you taste it with ice cream you will ask for seconds. As a cool refreshing drink, combine the strained liquid with seltzer water and serve over ice. Use caution, however, as it packs a wallop.

  • 11 cups roughly sliced fresh fruit (see Note)
  • 11 cups sugar

Method
