This naturally fermented fruit compote is unusual in its preparation and appearance.

It may look unappealing as it ages, but when you taste it with ice cream you will ask for seconds. As a cool refreshing drink, combine the strained liquid with seltzer water and serve over ice. Use caution, however, as it packs a wallop.



  • 11 cups roughly sliced fresh fruit (see Note)
  • 11 cups sugar


Mix 4 cups of the fruit and 4 cups of the sugar together in a large bowl. Transfer the fruit to a clean gallon size glass jar, cover the jar with a double layer of cheesecloth, and wrap a rubber band around th
