  • 8 large (1 week old) eggs
  • 1 teaspoon sea salt
  • 40 ml/

Method

  1. Cook eggs in simmering water for 8 minutes, or until hard-boiled. Remove from heat and plunge into cold water. Crack shells gently with a spoon until finely cracked all over. Put eggs in a saucepan with remaining ingredients, except chilli jam and condiments.
  2. Cover with water and bring to the boil. Cover pot, reduce heat to low and simmer for 30 minutes. Remove
