Ingredients

  • 1 X 1 kg/2 lb piece of belly pork, with skin
  • 4 teaspoons sea salt</

Method

  1. Bring a large pot of water to boiling point. Add belly pork and blanch for 3 minutes. Remove from pot and set aside to cool for 10 minutes.
  2. Mix salt with five-spice powder and ground pepper. Rub pork with sesame oil, then rub spiced salt liberally into pork, covering all surfaces. Stand at room temperature for 2 hours.
