Ingredients

  • 8 dried Chinese black mushrooms
  • 1 X 1 kg/2 lb piece of belly pork, with skin

Method

  1. Soak dried mushrooms in boiling water to cover for 30 minutes. Remove from water and cut off stems. Discard water.
  2. Meanwhile, cut belly pork into 4 even pieces. Put in a large pot, cover with cold water and bring to the boil. Simmer for 5 minutes, remove from heat and drain meat in colander. Rinse thoroughly under cold water.
