  • 20 ml/¾ fl oz olive oil
  • 1 medium-size brown onion, quartered

Method

  1. Heat oil in a large frying pan and fry onion, capsicum and garlic until softened. Add ras el hanout and harissa and fry for another 3 minutes, or until fragrant.
  2. Add stock and bring to simmering point. Add potato and turnip and simmer for 15 minutes. Add remaining vegetables and simmer for another 25 minutes, or until vegetables are soft and cooked.
