Ingredients

  • 3 tablespoons plain/all-purpose flour
  • ½ teaspoon sea salt

Method

  1. Season flour with salt, pepper and chilli. Coat whitebait with seasoned flour.
  2. Heat oil to 180°C/350°F in deep-fryer or large pot. Cook whitebait in small batches for 1 minute, or until crisp. Drain on paper towel.
  3. Serve with sambal bajak and lemon wedges.
