3 tablespoons plain/all-purpose flour
½ teaspoon sea salt
- Season flour with salt, pepper and chilli. Coat whitebait with seasoned flour.
- Heat oil to 180°C/350°F in deep-fryer or large pot. Cook whitebait in small batches for 1 minute, or until crisp. Drain on paper towel.
- Serve with sambal bajak and lemon wedges.
