  • 5 g/ oz dried birds-eye chillies

Method

  1. Dry-roast dried chillies and shrimp paste separately over low heat until fragrant.
  2. Soak dried prawns in warm water for 10 minutes, then drain.
  3. Blend all ingredients to a fine paste in a food processor or blender, adding a little water if necessary.
  4. Heat a wok and gently fry paste over moderate heat, stirring frequently, for 10—15 minutes or
