  • 4 large eggs
  • 20 ml/¾ fl oz vegetable oil

Method

  1. Put eggs in a saucepan of cold water and bring to the boil, stirring occasionally. Boil for 6 minutes. Remove from heat and plunge into cold water. When cool, peel carefully.
  2. Heat oil in a saucepan and cook spice paste with chilli jam for 2—3 minutes over moderate heat.
  3. When paste starts to smell fragrant, stir in coconut milk and bring to a simmer. A
