Method

  1. To make spiced coconut broth, bring coconut milk to the boil in a saucepan, uncovered, and boil for a few minutes. Add aromatics and simmer for a few minutes. Add stock and fish sauce and simmer on low heat for 15 minutes. Pass broth through a fine mesh sieve and add lime juice. Taste and, if necessary, adjust seasoning.
