Method

  1. Preheat oven to hot (220°C/450°F). Wash quails and pat dry with paper towel. Rub massaman curry paste into cavity of each bird and onto outer surfaces, covering generously.
  2. Heat oil in a deep-fryer or large pot to 180°C/350°F.
