This beautiful strawberry pie says summer! Make it when you have 8 cups of ripe strawberries that are plump but firm.
Puree 1 cup strawberries in the bowl of a food processor; transfer to a medium-size saucepan, and bring to a boil over medium heat, stirring constantly, for 3 minutes or until thick and translucent. Whisk together granulated sugar and cornstarch in a small bowl; add to strawberry puree. Stir in ½ cup water, and cook, stirring constantly, until strawberry mixture returns to a boil and thickens.
