  • 3 lb/1.36 kg sweet potatoes, peeled, sliced lengthwise ¼ in/6

Method

  1. Season the sweet potato slices with salt and pepper and toss in the olive oil.
  2. Grill on both sides over moderate to high heat until cooked through and well caramelized, 1 to 2 minutes per side.
  3. Once the sweet potato is done, brush with the pomegranate molasses and flip over to brush the other side. Allow the pomegranate molasses to caramelize on both
