Method

  1. Clean the nopales of all spikes and cut into medium dice.
  2. In a very hot skillet, sear the nopales in the olive oil until slightly browned on all sides, 2 to 3 minutes.
  3. Add the minced onion and continue to cook until translucent, about 2 minutes.
  4. Adjust seasoning as needed with lime juice, salt, and pepper. Add the cilantro and the cheese.
