  • 2 lb/907 g green plantains
  • Vegetable oil, as needed, for frying

Method

  1. Peel the plantains and cut them into 2-in/5-cm rounds. Deep-fry in vegetable oil at 350°F/177°C until well browned, 2 to 4 minutes. Drain on a wire rack and press, using a wooden board or a skillet, to a thickness of ¼ in/6 mm.
