Roast Potatoes

• 1 kg Maris Piper potato
• 100 g duck or goose fat or 100

Put a roasting tin in the oven (one big enough to take the potatoes in a single layer) and heat the oven to 200°C (180°C).

Peel the potatoes and cut each one into three or four evenly sized pieces so they are about 5cm cubes. Place the potatoes into a large pan and pour in enou
