Despite their name, Glamorgan sausages have absolutely no meat in them, so they are ideal for vegetarians and meat-eaters alike. The ‘sausages’ can be prepared up to a day in advance, then cooked when needed. Breadcrumbs can be made quickly in a blender or food processor, but if you haven’t got one, tear the bread apart with your hands.


  • 175-200 g (6-7 oz) fresh white breadcrumbs

Put 150 g (5 oz) of the breadcrumbs in a bowl and add the cheese, leek, parsley, thyme and plenty of salt and pepper. Mix well. Beat the eggs with the mustard. Set aside
