This is a simple way to jazz up plain chicken with aromatic spices and the sharpness of lime or lemon juice. You can prepare the chicken up to a day in advance.
With a sharp knife, make three deep slashes across the thickest parts of the chicken quarters so that the heat of the grill can penetrate right down into the meat.
