Method

This Catalan version of the bouquet garni is a deliciously scented little parcel of dried thyme, winter savory and oregano, wrapped in bay-leaves and tied up with string. Use it to flavour long-cooked dishes, as you would a bouquet garni. Keep it in an airtight container.
