This is a typically Catalan dish, although there the cod is sometimes used raw. The province of Bages, near Barcelona, is a wine-producing district and its capital Manresa was refuge to St Ignatius Loyola, the founder of the Jesuits, as he prepared for his religious vocation. Much later, it was the site of a serious defeat for Napoleon, whose troops destroyed the town before they fled. The residents rebuilt it from the rubble which gives some of the old city a curious appearance.
