This recipe, given to me by Bruno Pérolari, who lives in Marseillan, near Agde, is perfectly easy and needs no measured ingredients – do not be afraid.

Simply get, 6 oysters, say, or perhaps 3, or even 12 for each person. Heat the grill. Get the oysters open, or ask the oyster-seller to open them, and throw away the juice. Loosen each one from its shell, and turn it ove
