La Barthelasse is a small island in the Rhône, near Avignon, on the very border of Languedoc. On Sundays everyone used to make their way across the river to a small restaurant, la Bagatelle (now a hostel), to eat the sautéed chicken, because they did it so well there and it is so pleasant to arrive by boat and eat by the river. This is the simplest dish, but is delicious. The recipe can be varied by using dry white vermouth, preferably Noilly Prat, which is made in Marseillan, close to Agde
