For much of his life Mirabeau – one of the French Revolution’s earliest statesmen, and a child of the Midi – lived and worked as a politician in Aix; famously louche and extravagant, incapable of managing his finances, he was locked up for a time in the infamous Chateau d’If in Marseille harbour. A well-known gourmand in his day, he is quoted as saying,

The ingredients of this dish, supposedly invented for him, are in the spirit of Languedoc: green olives, anchovies from Collioure, and plenty of garlic.
