Open-cap cultivated mushrooms have enough flavour to make a good substitute for the local favourite milk cap mushrooms, lactaires délicieux, or ceps. The most divine-tasting black puddings come from Asturias in Spain, rich with smoke and a touch of paprika, but any good quality black pudding will be fine, as long as it is not too fatty, as this turns out to be a very rich dish.
