It is only further south in Valencia that they like to put snails in this paella; they do go very well with the rabbit; both provide food for free and have lived on much the same diet of aromatic plants out in the garrigue. Wild rabbits are sometimes called lapins gariguettes. I must admit that I prefer the taste and texture of farmed rabbit.
