Heat some butter and olive oil, add the mushrooms and fry them briefly. They are best if cooked for no more than 4–5 minutes – if water comes out, pour it away. At the last moment, season and add chopped garlic and finely chopped flat parsley. Let the garlic cook a little, stirring to blend with the mushrooms.
