This version of chestnut bread from Olargues keeps extremely well. I have sometimes taken the trouble to boil and peel 150g chestnuts and broken them into pieces to mix into the dough instead of hazelnuts, but it definitely results in a heavier loaf. This recipe is for one large loaf.
