Method

Crack the eggs into a large bowl. Beat in the flour, ground coriander and paprika until there are no lumps visible.

Purée the onion in the food processor. Spoon the onion purée into a fine sieve and press the purée with the curved part of a spoon to get the moisture out. Then add the onion purée into the egg mixture. Set aside some of the parsley and spring onion to use as a garnish. Ad
