Bring a large pot of water to a boil. Add the spinach, cover, and immediately turn the heat off. The spinach will cook in the hot water. Let it also cool in the cooking water. Then drain the spinach using a strainer. Press all the water out of it.
In a non-stick pan, heat 2 tablespoons of oil on medium heat.
