Combine the minced lamb or beef, garlic, parsley, cayenne pepper, chilli flakes, ground cumin and salt and pepper. Knead all ingredients until well incorporated.
Slice open the pita bread. On the bottom half, place a thin layer of minced beef and then layer with 2 slices of cheese. Close the sandwiches and lightly press the halves together.
