Ingredients

  • 500 g (1 lb 2 oz) of beetroot (cooked, thinly sliced)

Method

Combine all ingredients for the dressing. Salt and pepper to taste.

In a large bowl or serving dish, toss the beetroot, onion and spinach well with the dressing with your hands. Sprinkle with some walnuts and serve immediately.
