The kebabs are delicious in a flatbread, accompanied by fresh herbs and lemon juice.

Test to see if the minced chicken is well seasoned by frying a test portion. That way you can decide if you would like to add any more spices or salt.

Ingredients

  • 400 g (14 oz) of boneless chicken thighs (cut into large pieces)
  • 2 onions (peeled, quartered)

Method

Pulse all the ingredients a few times in a food processor. Continue blending on the regular setting for 1–2 minutes, until the kebab mix is finely chopped and smooth. Transfer the chopped chicken mixture into a bowl and cover with plastic wrap. Refrigerate for at least 2 hours. This makes it easier to form the meat around the skewers. It also brings out the flavours
