In a pitcher, pour boiling water over the hibiscus flowers and steep for 10–15 minutes. Strain the tea and refrigerate until cold.
Mix the hibiscus tea with the sparkling water, rose water and lemon slices. Add honey if desired and then serve the tea with a generous amount of ice cubes. Garnish with dried rose petals.
