  • 1 garlic clove (peeled)
  • Salt
  • 1 bunch of coriander (cilantro) (coarsely chopped)


Mince the garlic with a dash of salt in a food processor or, even better, mash it with a mortar and pestle. Add the chopped coriander, parsley, red chilli pepper and paprika to the garlic. Mash or blend until smooth. Add the toasted pine nuts and grind them with the other ingredients until thick and smooth in consistency.
