The addition of dried red chilli flakes makes these dehydrated mango fruit leathers deliciously moreish – and a challenge to eat when the heat kicks in rather unexpectedly. You can make these in a dehydrator if you have one, however it works perfectly on a very low temperature in the oven. This is more of a treat than a dessert.

Ingredients

  • 2 large mangos, preferably Pakistani honey mangos or any other sweet ripe mangos, cored and cut into chunks
  • ½ tsp sea salt

Method

Preheat the oven to 55–65°C/131–149°F/lowest possible gas mark and line a baking sheet with parchment paper.

Purée the mango pieces in a blender to a thick consistency, then add the salt, chilli and honey.
