Adding wasabi paste to your homemade mayonnaise makes a good wasabi-mayonnaise sauce, but real grated wasabi rhizome is even better. In order to make the color of this sauce a more intense green and to add a little pleasant bitterness, I stir in some Japanese green tea powder, matcha.
