Kelp curing has become a popular technique among sushi chefs in America. You can easily do the curing in your own kitchen. Traditionally we use white flesh fish, but I tried this preparation with salmon and it was excellent. Use absolutely fresh, parasite-free sushi salmon. The kelp-cured salmon is good for nigiri-zushi, sashimi, and other sushi preparations. Here I serve it with a mixture of sprouts and sea vegetable in an attractive salad.
