Zuke means “to marinate” in Japanese. The zuke method was developed in old Tokyo four hundred years ago to preserve fish, when no refrigeration was available. Just as there is an aging process for beef, this was the “aging” method for fish in Japan. Zuke adds a very different flavor to lean tuna, with the marinade ingredients moving the flavor toward a subtle sweetness.
