The best soft-shell crabs for this roll are fresh ones from Maine, when their fishery is open (usually spring to early summer). The second best choice is frozen soft-shells harvested in the United States. The frozen ones from Asia (Thailand, Malaysia) are good, but a little too meaty inside. However, they are less expensive than those from the United States. Prices also correlate to size—and the price goes up as the size increases (hotel, medium, large, jumbo, whale).
