Shrimp is a favorite for (almost) everyone in America and it makes a great introduction to sushi for those reluctant to eat raw fish. Using fresh shrimp is best, of course, but you can use frozen shrimp when you don’t have time to prepare fresh shrimp or can’t find any. And because the shrimp shrink when cooked, I recommend buying large ones.
