The flavours of fresh pineapple (and it must be fresh, as tinned seems to lose that lovely sharpness) and chocolate blend well together. Here, chopped pineapple in its juices has a gooey, nutty, chocolate top, rather like a mixture between a cake and a mousse with a caramelised glaze. It can be served warm or cold.

Ingredients

  • 1 small fresh pineapple
  • 4 tablespoons (4 x 15 ml spoon) strawberry jam

Method

Preheat the oven. Using a sharp knife, peel the pineapple and cut it into small pieces, leaving out the tough core in the centre. Put the pieces in a bowl, mix with the jam and then turn on to the bottom of an ovenproof dish (glass looks more intriguing), approximately 10 inches (
