The tropical element in this recipe is the guavas. They are one of my favourite tropical fruits and have the advantage of canning well. Here, guava halves stuffed and piled up with meringue swim in a tangy guava juice custard. This is a useful recipe because it is simple to prepare, visually effective and relatively inexpensive.
