There are certain themes, such as chocolate cake, which inspire countless variations. Apple tarts are another favourite and this, for me, is one of the best. It is simple, but exquisite: golden apples in a rich, orange-flavoured cream, with a wonderfully light pastry crust. This tart is also good made with dessert pears and when they are in season fresh apricots are especially delicious.
