This is a combination of old favourites – chocolate, cream and raspberries. The gâteaux is featherlight and moist at the same time and the whole thing looks and tastes a dream. In winter I use a small jar of black cherry jam instead of fresh raspberries.


  • 6 oz (175 g) good plain chocolate, broken up
  • 5 large eggs (size 1–2), separated
