This is wickedly rich, but nevertheless no one can resist a second helping. The crust of ground rice and cinnamon holds a soft, dark chocolate and egg yolk filling, topped with whipped cream.


For the crust

  • 3 oz (75 g) butter

Preheat the oven. Melt the butter for the crust and put on one side. Mix the ground rice, flour, caster sugar and cinnamon together in a bowl. Pour the butter into the mixture and mix thoroughly with a wooden spoon. Spoon the mixture into a 9–10-inch (23–25 cm) flan tin with a loose base and press firmly and evenly all over and up the sides.
