Ingredients: 1 tablespoon (15 ml spoon) hot water; 1 teaspoon (5 ml spoon) instant coffee; 5 oz (150 g) plain chocolate, broken up; 5 fl oz (150 ml) water; ¾ pint (450 ml) whipping cream; 4 oz (100 g) demerara or soft pale brown sugar; juice of 1 lemon; 1½ packets (approx.) sponge fingers; juice of 2 oranges; a good pinch of salt; 4 oz (100 g) caster sugar; 2 large eggs (size 1–2)
